Little League Season Calls for Quick Meals

Spring in the Northwest is a wonderful thing. Daffodils start poking through in late February. The grass greens and starts growing in mid-March. The frogs start to sing in the evening, and mornings are happily announced by birdsong.

On Bainbridge Island, there is another harbinger of spring: Little League. Teams were announced last week, and coaches have already started scheduling practices (Jem is on the A's, Jack is on the Red Sox, and Charlie's team is to be determined). With three sons playing baseball this year, my husband and I can count on a minimum of five games and five practices per week. On top of baseball, our boys also play lacrosse, which practices twice a week. Needless to say, our spring weeknights are busy and our kids are constantly hungry.

Last year, I just treaded water. Our dinners alternated between sandwiches, burritos, and pasta every weeknight, with the occasional supermarket roasted chicken thrown in for variety. Meals were boring, everybody complained, and the nutritional value of our meals could be called anything but stellar.

This year, I am determined to try something different. The Meijer Meal Box widget offers a category called Quick Meals, all with start to finish cooking times under 30 minutes. With a quick scroll through of the 561 recipes currently listed under Quick Meals, I developed a meal plan for next week’s weeknight dinners.

Monday dinner will be Citrus Olive Chicken with Rice and Steamed Broccoli. Tuesday we will have Balsamic Grilled Salmon and Honey Glazed Carrots, and Wednesday calls for Asian Pork Satay with Green Beans with Garlic. Thursday for we dive into Fish Tacos, and Friday we will gear up for the weekend with Rosemary Sage London Broil and Lemony Brussel Sprouts. The Meijer Meal Box widget instantaneoulsy generated a complete shopping list for me, so I can shop on Sunday and have all the ingredients ready and in the fridge for the weeknight meals.

Can these dinners really be cooked in 30 minutes? Will Jack eat a brussel sprout? Will Charlie's coach Steve win the name lottery and get the Red Sox? I’ll post my results next week.
