Some friends and I went to Vancouver last weekend to run the Vancouver Half Marathon. It is a wonderful race, very scenic and friendly, and the organizers and participants were so fun and friendly, we have made it an annual event to trek up there for a girls' weekend.
On the way home, famished, we stopped at this incredible store in Vancouver on Granville Street called
Meindharts Fine Foods . This store is amazing! Yes, we were starving and a bit punchy from running 13 miles, so any food might have looked appetizing, but Meindharts is out of this world. The Deli case, filled with meats, cheeses, homemade salads and sandwiches, ran the length of the store, and offered a dizzying array of choices. I sampled a lovely pork tenderloin, a feta salad, and a tangy coleslaw with mango before settling on a brie and black forest ham panini. My cohorts chose pastrami and roast beef sandwiches, a roasted beat salad, a greek salad, and a chicken curry salad, and all pronounced their choices delicious. In addition, the store offers wonderful pastries and desserts, and aisles and aisles of gourmet groceries from all over the world (Marianne bought a tea she hasn't been able to find since she left Hong Kong).
On the three hour drive home, our talk turned to cooking at home. Inspired by Meindharts' bounty, we agreed that salads like Meindhardts' could easily be made at home in large batches and eaten for lunch and dinner side dishes throughout the week. Marianne (who placed 3rd in her age group, to brag for her just a bit....) loves this
Bulgur Salad that keeps in the fridge for 3-4 days. I'm crazy about my friend Alison's
Orzo Salad, which also keeps for up to a week in the fridge, and we all agreed that nothing beats a
Greek Salad when tomatoes and cucumbers are in season. (The Greek Salad only keeps well for 2 days).
Give these salads a try and send me any suggestions for your favorite side salads.
